On Thursday I worked 11-3 at Great Harvest, then headed straight to the gym from there. That schedule actually works out really nicely for the days when I get off work at 3:00. Nothing is ever going on during the late afternoon, so it's the perfect time to get a workout out of the way and then come home and shower before I start my evening and cook dinner. I did the elliptical and the treadmill. I ran home to shower and then met up with Nicole to go to my new favorite place in the world - Whole Foods! She had never been before, so I was excited to introduce her to it! I picked up a few things I needed for dinner, as well as just a few things I wanted, included sundried tomatoes and DELICIOUS apricot ginger cream cheese. :)
When I got home I immediately got to work prepping everything for the dinner Clay and I had planned. I noticed that I had plenty of green veggies in my fridge including asparagus and broccolette (also called broccolini, a longer, thinner version of broccoli that tastes very sweet, with hints of both broccoli and asparagus) (also from Whole Foods), and spinach. I've also had some ready made pizza crusts in my fridge for a while, and I had the idea to combine them and make a homemade white pizza and put all the veggies on it. I searched for recipes and stumbled across this recipe for White Pizza with Crab and Asparagus. Clay and I were digging the idea of finding some seafood, and decided we could easily adapt the recipe to use all of the fresh ingredients we wanted to use up before the weekend. It turned out to be AMAAAZINGGGG. Seriously. We ate it with stuffed baby peppers, a recipe I adapted from a Giada recipe. It was a very gourmet, delicious dinner.

Friday was a whirlwind as usual. Sandwiches 9-3, a short break, Petit Pois 5-10. I ate half a tofu and pesto sandwich for lunch and some leftover pizza for dinner. No time for a workout, so just weights and situps for that day.
Today I worked another sandwich shift, and went to the gym straight after. I'm home in Woodstock now (!!), so I switched my workout order because we don't have an elliptical here. Today I did the bike and the elliptical. When I got here, my grandma had dinner waiting for me: typical Funkhouser family Saturday night meal: a big salad full of veggies and hard-boiled egg, steak, baked potato, fresh green beans, and dinner rolls. Yum.
