(Not So) Lazy Days

Yesterday was my day off for this week. I gave in to my laziness by sleeping until almost noon. I never get to sleep in these days since I'm always working, so I didn't feel bad taking advantage of that. Once I got up I set about cleaning my apartment. It felt good to finally have time to do little household chores around here that I hadn't had time to do during working days.

Clay was working allllll day, driving one bus from morning until evening. To help him break up the day, and to give me a chance to see him for a little bit, I took his bus to the gym! It took more time than it would have for me to drive, but it was fun. :) I did a treadmill and bike combo and then waited for his bus to come around again and rode home.

I finished up my workout with weights and situps, took a quick shower, and made a trip to Kroger to pick up a few things for the dinner I was planning. I made: stuffed chicken, pasta with sundried tomato pesto, and parmesan corn on the cob. Along with our Italian guac, we had a very filling meal!

the chicken before it went in the oven: stuffed with spinach, onion, ricotta, parmesan, basil, and pepper

after they were baked, with cheese oozing out of them, and plenty of Italian seasoning on top!

organic whole wheat penne with sundried tomato pesto that I made FROM SCRATCH!

fresh corn on the cob, brushed with a mixture of olive oil, salt, pepper, parsley, basil, and parmesan cheese, with more parmesan sprinkled on top

It was a good meal, but when I make these things again, I will definitely tweak some things. As for the chicken, while it was good, it was a little bland. The recipe I followed called for a tomato-yogurt sauce that I was a little wary of, so I skipped it. Next time I'll come up with something, though. Also, my pesto was great and I was so excited to make it from scratch using all fresh ingredients, but there was way too much garlic in it! I'm still tasting it a day later after many rounds of toothpaste and mouthwash. Another tweak. Oh well! That's cooking for you!

Today consisted of: opening at the bakery (such a great shift!), a trip to the gym including bike and elliptical, weights/situps/shower at home, lunch (cashwe butter and grape jelly on Dakota, yogurt with Cville Cluster granola and honey), some down time, and then finding out I don't have to work at Petit Pois tonight!!! I'm SO excited for a night off! It's Midsummers at UVa and a lot of my friends are in town, so I'm off to go hang out with them!!
