Reunited and It Feels So Good!

After an extra long weekend spent apart, Clay and I have spent some good quality together the past two nights, and obviously those nights have centered around food.

Yesterday I woke up super early and drove back to work sandwich 9-3. I was super tired all day, but still went to the gym after: bike and elliptical. Then later on Clay took me out to dinner! I love dinner dates more than anything! This time we tried The Local, which I have heard so much about. They use local ingredients in their dishes and it's supposed to be really good. Unfortunately though, we were a little let down. I don't know if my hopes were just too high or what, but I didn't think it was that amazing. I ordered a turnover with squash, zucchini, ricotta, and mozzarella, served with couscous. I was excited about it because I love my veggie dishes and this one had a lot of things that I loved. When it was served, though, the "turnover" turned out to just be two little strips of dough with barely any food inside them. I was expecting a big calzone, not basically two crispy breadsticks with a hint of cheese inside them. Clay ordered duck in a blood orange sauce with mashed potatoes and braised greens. He thought it was kind of lackluster, as well. We were disappointed, but it was still good to go and at least find out for ourselves that it's not really our style. We'd rather go around the corner to Mas any day! I also forgot to take pictures, but I'm not too torn up about that.The night ended well, with several Wii Sports games, and a visit to Nicole's apt while Clay was driving buses. :)

Today started out virtually the same as yesterday. Sandwiches 9-3, gym (elliptical and treadmill), weights and situps. Then Clay and I basically vegged out the rest of the night since we were both so exhausted from work. However, we finally did get up off our butts and cook dinner for the first time in a while! We made a stir-fry!

- brown rice (cooked according to box instructions)(back left burner)
- 2 scrambled eggs to go in the rice (front right)
- stir-fry beef, cooked in olive oil, seasoned with salt, pepper, and ginger (front left)
- VEGGIEEES, cooked in olive oil, seasoned with salt, pepper, ginger, vegetable seasoning, teriyaki stir-fry sauce, and a little soy sauce. Our veggies included: broccoli, cauliflower, carrots, snow peas, bell pepper, onion, garlic, and sweet baby peppers. The first five came together in a ready-made, already sliced package in the produce section. So handy!

We combined the beef and the veggies and served it over the rice. It turned out great! Such a quick and easy meal.



And finally, as a special surprise, I brought home APPLE CRUNCH ROLLS for dessert! Yay!! They just took the regular apple crunch dough, formed it into little rolls, and spread icing on top. They were SO amazing.

Tomorrow is my day off, and Clay is driving the entire day! Does this mean I'll spend the time alone concocting something awesome for dinner? Probably. :) Goodnight!
