An Old Favorite

Tonight was an exciting night! Clay and I took advantage of an idea that I had almost a year ago: our recipe box!


This was a present that I gave Clay for our six-month anniversary! We had experimented with cooking meals together during our visits to each other during the summer. As someone who has loved to cook for several years now, I was very excited to discover that my boyfriend not only enjoyed cooking with me, but was also very handy in the kitchen! I couldn't wait to get back to UVa where we would finally be living in apartments/houses instead of dorms so we would be able to cook together more. I made this box with the hope that we would be able to preserve our escapades in the kitchen by writing out recipes of meals that we cook together/eat together that we deem delicious enough to want to make again. We started out well and put a few recipes in it, but then fell off and didn't for a long time. However, now that I have this blog and I've committed to making food and cooking a bigger part of my life, the box has come back out and we're working on filling it!

Our dinner tonight came from one of those early recipes! We made our very own Fiestitas with Fiesta Rice! - Clay comes up with the best recipe names :) We were in the mood for Mexican, and wanted a good recipe to highlight our awesome peppers we bought from the Farmer's Market:


We made the Fiestitas last year when we bought cool peppers, so we figured we'd make them again!

Fiestitas with Fiesta Rice

Ingredients
- 3 boneless, skinless chicken breasts
- 4 small peppers, in a variety of colors
- 1 small white onion
- 1 small red onion
- 3 cloves garlic
- 1 tomato
- 1 lime
- 3 handfuls baby spinach
- 2 cups white rice
- flour tortillas
- olive oil
- butter
- Mexican shredded cheese blend
- salt & pepper

Recommended Seasonings
- seasoning salt, oregano, garlic powder, onion powder, chili powder

*while making the fiestitas, simulatenously fix desired amount of white rice according to package instructions.

Dice chicken and tomato, cut peppers and onions into strips, and mince garlic. Place large skillet over high heat, coat bottom of the pan with olive oil. Add chicken to pan. Cook for about 5 minutes, stirring often, until chicken starts to brown. Add garlic, stir, and cook for another 2 minutes. Add peppers and onions, stir, and season to taste. Add in handfuls of spinach every few minutes as it cooks. Continue to season to taste.

While fiestitas are cooking, add 1 tablespoon of butter, chopped tomato, a handful of spinach, a handful of cheese, and lime juice to rice, as well as any desired seasonings. Stir until all is incorporated.

Heat tortillas in microwave, and prepare extra tomatoes, cheese, salsa, guacamole, and sour cream for topping (as well as any of your other favorite toppings).

Serve and enjoy!




It was just as good as the first time!
